Ingredients (Makes 6-8 pancakes):

        1 cup spelt flour (or gluten-free flour blend)

        .5 tsp Inner Fire Seamoss Powder

Ingredients:

For the Mofongo:

        3 semi-ripe plantains, sliced

        2 tbsp avocado oil

        Sea salt or Himalayan salt, to taste

        1 green onion, chopped

        1-2 tbsp coconut oil (optional for added moisture)


For the Stew:

        2 tbsp coconut oil

        1 tsp cumin powder

        1 bunch green onions, chopped

        1 onion, diced

        2 tomatoes, chopped

        1-2 carrots, diced (optional)

        1-2 stalks celery, diced (optional)

        1 cup mushrooms, sliced

        1 tsp seasoning salt blend

        1 cup cooked chickpeas

        1 cup diced squash

        1 cup homemade coconut milk

        1-2 tomatoes, whole or halved

        4 tbsp sea moss gel or .5 tsp of your favourite Seamoss powder

        1 can ackee, drained (optional but legendary!)


Instructions:

    1.    Prepare the Mofongo:

a. Preheat the air fryer to 375°F (190°C). Coat plantain slices with avocado oil and a pinch of salt, then air-fry for 7 minutes until golden and tender.

b. Mash the cooked plantains in a bowl with chopped green onions and coconut oil (if using). Form into balls or mounds.

    2.    Make the Stew:

a. Heat coconut oil in a large pot. Add cumin and toast briefly.

b. Sauté onions, tomatoes, mushrooms, and seasonings until soft and fragrant.

c. Add chickpeas, squash, and coconut milk. Simmer until vegetables are tender.

d. Stir in sea moss gel to thicken the stew. Gently fold in ackee and cook for another 2 minutes.

    3.    Assemble:

a. Place the mofongo mounds on serving plates and ladle the stew generously over them.

b. Garnish with fresh herbs or green onions.


Notes: This dish pairs well with a fresh salad or steamed greens for balance.
